Restaurant kitchen cleaning in Singapore: a checklist for F&B outlets
Daily, weekly and deep cleaning tasks that keep your kitchen hygienic, safe and ready for inspection.
In F&B, a dirty kitchen isn't just an appearance problem. Grease build-up is a fire risk, food debris attracts pests, and poor hygiene can put your licence and your reviews at risk. Most outlets clean every night, but the areas that cause real trouble are the ones that only get attention once in a while.
Here's a practical kitchen cleaning checklist for restaurants, cafes, food court stalls and kiosks in Singapore.
Daily kitchen cleaning (end of every service)
- Clear, wash and sanitise all food prep surfaces and cutting boards
- Degrease the stove top, woks and burners
- Filter or change fryer oil and wipe down fryer surrounds
- Clean sinks, taps and dishwashing areas
- Empty and wash bins; remove all food waste from the kitchen
- Sweep, scrub and squeegee floors, including under counters
- Clean floor drains and grease trap covers
- Wipe chiller and freezer handles and door seals
Weekly kitchen cleaning
- Deep clean inside chillers and freezers; check for expired stock
- Clean walls and tiles behind cooking stations
- Descale dishwashers, kettles and hot water dispensers
- Pull out movable equipment and clean behind and underneath
- Clean shelving and dry store racks
Monthly or periodic deep cleaning
- Exhaust hood and filters. Grease-soaked filters are one of the biggest fire risks in a commercial kitchen.
- Kitchen equipment wash-down. Fryers, ovens, grills and steamers stripped and degreased properly.
- Ceiling, lights and fans. Grease and dust settle up high and eventually drop back onto food areas.
- Floor degreasing. Machine scrubbing removes slippery build-up that daily mopping can't.
- Pest control coordination. Scheduled treatment works best right after a deep clean.
Don't forget the front of house
Customers judge hygiene by what they can see. Tables, chairs, menus, condiment holders, display counters, glass panels and customer toilets all need the same attention as the kitchen. For mall outlets and kiosks, shopfront and signage cleaning matters too.
In-house staff or a professional cleaning company?
Most F&B teams handle daily cleaning themselves. The problem is that after a long shift, deep cleaning is the first thing to slip. A professional crew can handle the heavy work, such as equipment wash-downs, hood cleaning and floor degreasing, after closing hours without eating into your staff's time.
